Really freakin’ good zucchini bread! Pardon the name, but that’s what my husband calls it. 🙂
We eat this stuff for breakfast, snacks, and even dessert. With hot tea….YUM! My four year old even requests it!
Ingredients:
- 3 eggs
- 1 3/4 cup sugar
- 1 cup oil (you can substitute 1/2 the oil with applesauce)
- 3 cups zucchini, shredded (not drained)
- 1 tsp salt
- 1 tsp baking powder
- 1/4 tsp baking soda
- 2 tsp vanilla
- 3 cups all purpose flour
- 1 cup chopped nuts
Directions:
- Preheat oven to 350 degrees.
- Spray two loaf pans with nonstick cooking spray.
- Mix the oil and sugar (and applesauce if you’re using it).
- In a separate bowl, beat the eggs until foamy then add to oil/sugar mix.
- Add all other ingredients and mix well.
- Pour batter into two greased loaf pans.
- Bake for one hour at 350 degrees.
- Test with a toothpick – make sure that it comes out clean.
- Cool in the pan.
Notes:
- This freezes VERY well!
- Don’t worry about peeling the zucchini.
- Use the large holes on a box grater to shred zucchini.
- Don’t salt, drain, or squeeze out any of the liquid from the zucchini.
- I usually sift my dry ingredients before adding them to the batter. Not required though.
- Cinnamon is a great addition.
- You can use any kind of nuts – pecans, walnuts, etc. I use 3/4 cup chopped walnuts and 1/2 cup (unsalted) sunflower seeds.
- You can substitute 1/2 the oil with applesauce!
- I’ve been able to cut the sugar down to 1 1/4 cup no issues. I’m sure you could use a “healthier sugar” like coconut sugar, but I always just use regular sugar.
