Recipe Notes
This freezes VERY well!
Don't worry about peeling the zucchini.
Use the large holes on a box grater to shred zucchini.
Don't salt, drain, or squeeze out any of the liquid from the zucchini.
I usually sift my dry ingredients before adding them to the batter. Not required though.
Cinnamon is a great addition.
You can use any kind of nuts - pecans, walnuts, etc. I use 3/4 cup chopped walnuts and 1/2 cup (unsalted) sunflower seeds.
You can substitute 1/2 the oil with applesauce!
I've been able to cut the sugar down to 1 1/4 cup no issues. I'm sure you could use a "healthier sugar" like coconut sugar, but I always just use regular sugar.
