My good friend Breanne introduced me to these super easy peanut butter (and chocolate!) balls that are the perfect snack. They’re great for that little something sweet you want after dinner or even a substantial snack to keep you full in the afternoons. I wouldn’t even mind if Alisa ate one or two for breakfast.
My favorite part is that they pack in some great ingredients like oatmeal and chia, flax, and hemp seeds. You never would have known if I didn’t tell you! There’s a great pre-mixed seed blend that Breanne also told me about that I used in this recipe. You can get it here.
I made these one night after dinner while Misha was giving Alisa a bath. It was super easy and quick. You will have to let them firm up by chilling them in the fridge for a couple of hours. You’ll also have to store them in the fridge so it’s not a big deal. We have been eating them all week!
*Side note* Hemp seeds will make you test positive on a drug test. My hubby informed me of that after he stuffed one in his mouth and had to spit it back out when I told him about the hemp seeds. Whoops! Ha ha! Was that planned? No. Beneficial? Maaaaybe. More for me! Mwuah ha ha!
I hope you enjoy these as much as I have!
- 1/2 cup oatmeal
- 2 tablespoons Triology mixed seeds (you can just use chia/flax if you'd like)
- 1/2 cup dark chocolate chips
- 1/2 cup peanut butter (or any nut butter of your choice)
- 2 tablespoons honey
- 1/4 cup shredded raw coconut
- 1/4 cup pecans, finely chopped
- Mix the first three dry ingredients until incorporated.
- In a separate bowl, combine the peanut butter and honey.
- Add peanut butter mix into the dry ingredients.
- Evenly spread shredded coconut and chopped pecans on parchment paper.
- Form small, uniform balls (a melon baller works great) with the peanut butter “dough”.
- Roll balls in the coconut and pecan mixture.
- Chill balls in the refrigerator for at least two hours.
- Please note that the balls should be stored in the refrigerator!
