Y’all. Seriously. This is by far the easiest dish you will ever make.
I have to thank my mom for this one. For as long as I can remember, she has been making this dish. It’s become her signature dish and “Aunt Jan’s Brown Rice” is expected at all family functions.
Now, without fail, whenever I make this dish, I get complimented every. Single. Time. We had a neighborhood potluck that we went to a couple weeks ago and someone came up to me and said, “Aha! I knew you were here! I tasted that rice and knew it was yours! It’s my favorite!”
Additionally, it pretty much goes with anything and is perfect for any time of the year. You can have it on your Thanksgiving table, for Easter dinner, for a neighborhood potluck, or a random weeknight. We’re having it tonight with baked salmon and a simple side salad.
Two bonus advantages (in addition for getting credit for being an amazing cook):
- It makes your kitchen smell amazing.
- It’s only five ingredients. FIVE!
It’s my simple go-to recipe especially for social gatherings. You basically can fix it and forget it. I usually prep it (like we’re talking two minutes tops), put it in the oven for an hour, and get myself and family ready. The oven timer goes off, I put it in the casserole carrier, and off to the party we go!
Without further ado, here’s the recipe:
Ingredients:
- 1 cup of uncooked white rice (not instant)
- 1 can condensed beef consommé
- 1 can condensed French onion soup
- 1 can sliced mushrooms (do NOT drain)
- 1/2 stick of butter
A couple of notes:
- When I make it for social gatherings, I double up the recipe.
- If you (or your children) don’t like mushrooms, you can leave those out. Wow…now only a four ingredient dish! 😉
Directions:
- Preheat oven to 350 degrees.
- Melt the butter in a small baking dish.
- Add the rice, beef consommé, French onion soup, and mushrooms (WITH liquid) in that order to the melted butter. Use a larger baking dish (9 x 13 inch) if you have doubled the recipe.
- Bake on 350 degrees for one hour.
