This is one of my favorite go-to slow cooker meals that’s great to serve any time of the year. It’s easy, healthy, delicious…need I say more?
When I do meal planning, I usually add at least one slow cooker meal into our week. It’s usually on Wednesdays because that’s kind of a crazy day for us. There’s pre-school, work, pick-up from pre-school, work, Bible study, a meeting at church before Bible study, Misha getting home late, and just life in general with a two year old. 🙂
Sounds like we just need to eat out on Wednesday nights, but y’all, this slow cooker recipe makes it possible for us to have a healthy home-cooked meal!
When Alisa is strapped down in her high chair eating lunch, I combine all the ingredients in the slow cooker and just forget about it for a few hours. I like a lot of extra add-ons (listed below) so I go ahead and prep/chop all those so everything is ready to eat right when we need it.
You can eat this enchilada quinoa straight out of the slow cooker as-is and it’s delicious, but I like to dress it up with lots of extra add-ons. Some of my favorites are:
Fresh cilantro
Sour cream or Greek yogurt
Avocado
Fresh tomato
Green onion
Black olives
Jalapeños
Fresh lime juice
Cheese (cheddar, Mexican blend)
Spinach or romaine lettuce
Cilantro/lime/ranch dressing (I like this one)
- 1 (15 ounce) can black beans, drained and rinsed
- 2 (10 ounce) cans enchilada sauce
- 1 (14 ounce) can diced fire-roasted tomatoes
- 1 cup uncooked quinoa
- 1/2 cup chicken broth or water
- 1 cup cheese (cheddar or Mexican blend)
- 1/2 teaspoon cumin
- Fresh cilantro
- Sour cream or Greek yogurt
- Avocado
- Fresh tomato
- Green onion
- Black olives
- Jalapeños
- Fresh lime juice
- Cheese (cheddar, Mexican blend)
- Spinach or romaine lettuce
- Cilantro/lime/ranch dressing
- Coat slow cooker pot with cooking spray.
- Add all the ingredients and stir together. Cook on low for 4-5 hours.
- Uncover, top with add-ons if desired, and serve!
- *You can also add one can of corn to the quinoa mix if you’d like.
- *I like to serve mine over a bed of greens and add all the “extras.”
